Do you ever allow people to set up a special audition date/time if they are unavailable on the posted dates? If so, would you do this for anyone, or just certain people?

Yes, of course. And I do it for anyone.
If there's more than one, I try to find a time to accommodate all of the "stragglers".
Most importantly, I make sure it's done in a timely manner.
I do want to know the reason they can't make it, though. There may be a clue in there as to whether or not you'll have problems with attendance during rehearsals.
In essence, I'll bend a little, but I won't turn myself into a pretzel for no good reason.

Yes, I will provide a special audition date/time for anyone. I have a very strong preference that it be before regular auditions or at least before callbacks. One group I work with often auditions musicals with singing on Monday and cold reads on Tuesday with callbacks on Wednesday. Being unavailable for callbacks is a real problem for me. I rely heavily on being able to see actors for the same role side by side. That said, sometimes an actor is head and shoulders above the rest. If the actor needs to miss Monday or Tuesday I will suggest staying late on the other day to do what they missed or do it over the weekend before.
