Has anyone produced, directed, or been involved with any good audience participation plays? I've looked at a few online, but they have content that's too mature for high school students.

We did "You have the right to remain dead" in the high school.

I think you've done some of my shows before, but the ones I've written that have audience participation are:
 
The Brothers Grimm Spectaculathon
The Greek Mythology Olympiaganza
The Murderous Mansion of Mr. Uno (audience votes on who the murderer is - the actors pick out different endings dependent on the vote.)
 
All of them are available through playscripts and can be read online.

Many murder mysteries are going to have audience participation in them. Or it can be added. Look for Agatha Christie - 10 little Indians or the Mousetrap. Or And then there were none. All of those could have some kind of ballotting procedure. (You know, if you wanted to do a play I didn't write!)
