I need a good, fun holiday play for 7th-8th graders. I have about 25 kids I need to cast, need very simple (or no) sets... non-musicals only, please, but I could manage some carolers or a few well-known holiday tunes.

I have a bunch that have been done in quite a few middle schools. My most recent is The Trial of Santa, about Santa's appearance on a Judge Judy type show after being sued for bringing the wrong present. You can read it online for free here:

My one-act play Twisting Carol, a wacky take-off on A Christmas Carol, has been produced successfully a number of times at the middle school level, and can have a  large cast.  You can read most of it online for free on the Playscripts website:

Our high school did "Last Stop Till Christmas" %20 - http://www.pioneerdrama.com/SearchDetail.asp?PC=LASTSTOPTI for the Elementary schools and I think it could be done by a middle school. It was fun!
